I have to admit, I’m not much of a traditional potato salad fan, but my mom’s potato salad wins me over every time. This potato salad incorporates the yummy flavors of a dressed baked potato and garlic smashed potatoes! My mouth is already watering. Good thing I have some left-overs in the fridge!
Ingredients for Potato Salad Goodness:
1. Small bag of red skinned potatoes
2. 1/2 tablespoon Garlic Salt(Mrs. Dash Garlic Seasoning Substitute if on low salt diet)
3. 1 cup torn Spinach
4. 1/3 Red onion finely chopped
5. 3 stalks Scallions chopped
6. 1/2 cup Light Sour Cream
7. 1/4 cup Light Mayo
8. 1 teaspoon Dill
How To Make Potato Salad Perfection:
Cut your potatoes into quarters. Do not peel the skin off! Place your potatoes in cold water and place on stove top. Bring them to a boil and let boil until they are soft to the prick of a fork. Don’t overcook them or they will turn to starch. Drain your potatoes. Place them in the fridge to cool. Now, mix up your sauce. Combine the sour cream, mayo, dill, pepper, and garlic salt. Chop your onions and tear your spinach. Pull out your potatoes and mix it all together. Yummy! If you really want the baked potato feel you can add some bacon crumbles to the mix.
As I’ve mentioned before, I’m a toss it al together kind of girl. Make sure that you taste your potato salad once you’ve tossed it all together. If you need more garlic salt…sprinkle a little more into the bowl. If you feel like the spinach looks whimmpy…tear up some more. If you want a heavier sauce…mix up some more sour cream and mayo and throw it on. You aren’t going to hurt anything! Cooking to taste is always best.
